Goa is also known for its authentic Goan food due to which many tourists attracts. Goan food is unique due to its rich, diverse and cultural heritage and inflences from the past. There is a liberal use of rice, fish, kokum, cashews, coconuts, spices, and vinegar in Goan cuisine.

A lot of Goan dishes like Goan Chicken Cafreal, Prawn Balchao, and Pomfret Recheado are popular and well known around the country. There are major similarities between Goan food and the Portuguese cuisine as the Portuguese inhabited in Goa for almost 400 years in the past

Goan Chicken Cafreal

    Ingredients required

     Masalas

    150 gms Coriander Fresh, 5 gms Ginger, 5 gms Garlic, 5 gms Green Chillies, 1 gms Coriander seeds, 1 gms Cumin seeds, 1 gms Fennel seeds, 0.25 gms Cloves , 0.25 gms Cinnamon stick, 1 gms Black Peppercorn, 20 gms White Vinegar, 30 gms Water, 1 gms Salt

    Marination

    250 gms Chicken legs, 0.5 gms Lemon, 2 gms Salt, 30 gms Oil , 60 gms Onions , 1 gms Turmeric

         

    METHODS

    1. Place all the ingredients of the masala in a blender & prepare a fine paste.
    2. Marinate the chicken with 20% of the prepared masala paste and leave it for at least 4 hours.
    3. In a hot pan, saute chopped onions until it becomes translucent.
    4. Add little turmeric into it.  Saute it for 15 seconds and than add the marinated chicken pieces into it.
    5. Lightly cook the chicken pieces for a minute and add in rest of the masala paste.
    6. Cook it for 15 mins more on a slow flame and at the end check the seasonings.
    7. Serve garnished with coriander spring and sautéed potatoes on the side.

     

    Prawns Balchao

      Ingredients required

      Masalas

      50 gms Kashmiri chilly dry, 2 gms Cumin seeds, 2 gms Black Peppercorn, 1 gms Cloves, 0.5 gms Cinnamon stick, 10 gms Garlic, 10 gms Ginger, 30 gms Vinegar, 3 gms Salt, 1 gms Sugar

      Marination

      250 gms Small Prawns (tail on), 1 gms Turmeric, 1 gms Salt, 1 gms Curry leaves

       METHODS

      1. Marinate the prawns with turmeric & salt and leave it aside for 15 mins.
      2. After that blend all the ingredients for masala so that it becomes a smooth paste.
      3. Take a hot pan and add some oil. Saute the prawns until it is almost 90% cooked and than keep it aside.
      4. In the same pan, add oil and curry leaves and saute until it crackles.
      5. Immediately add in the chopped onions and saute until it becomes translucent.
      6. Add the masala that you have prepared and cook on a slow flame for 15 mins.
      7. Add the sautéed prawns and season.

       

      Pomfret Recheado

        Ingredients required

        Masalas

        50 gms Kashmiri Red Chilly, 1 gms Cumin seeds, 0.5 gms Cinnamon, 1 gms Cloves, 1 gms Black peppercorn, 10 gms Garlic, 5 gms Ginger, 30 gms Onions, 2 gms Salt, 1 gms Sugar, 20 gms Vinegar, 1 gms Tamarind

        Marination

        1 gms Pomfret, 2 gms Turmeric, 1.5 gms Salt, 30 gms Oil, 30 gms Semolina

        METHODS

        1. Dip the spices in the vinegar for 2 hours or you can even keep it overnight.
        2. Place all the ingredients for masala including the spices dipped in vinegar in a blender and prepare a fine paste.
        3. Apply the salt and lemon juice inside the fish and marinate it well. Then marinate it with the prepared masala by stuffing it inside the fish.
        4. Let the fish rest with the marinating for 15 to 20 mins.
        5. Dust the marinated fish with a light coating of semolina & fry in a medium hot pan for 5 mins on each side.
        6. Remove and serve with rice and salad.
